Abstract
Food labels provide valuable information to consumers regarding the nutritional value of different foods. This information assists consumers in the selection of healthy foods. The design of food labels has recently undergone important changes. Food labels often include health claims on the front of food packages. These are regulated by the FDA. This chapter explains how to interpret and apply the information provided by food labels. This chapter also includes information on the nutrients provided by various foods and food sources of a range of nutrients.
